It might be coincidental, but whenever I'm in the South I find more coffee establishments open late versus anywhere else (save maybe the Northwest). Maybe it's because the alcohol laws are more relaxed or that their patrons just get up at later hours, but when I was driving through Alabama, I had plenty of places to pick for a cup of coffee after supper.

Due to proximity and repute, I settled on a place called Seeds Coffee Company while driving through Birmingham. Established in a former gas station, the only true giveaway to its former owner is the giant metal canopy that now houses a gated seating arena. The coffeehouse interior resides in a long building, pleasingly outfitted with lots of warm lighting, assorted furniture and plenty of room for their many patrons.

Roasting their own coffee, I relied on the barista to steer my selection. He recommended an Ethiopia Gadeb Asasa for both my espresso and pourover, to which I gleefully acquiesced. The barista pulled the shots short with a light brown crema, imparting notes of strawberry, lemon candy, chocolate, brown gravy and a touch of basil, proving overall sweet, fruity and smooth. The pourover additionally held the sweet, fruity flavors of strawberry, raspberry, caramel, apple sauce, wheat, vanilla and cream in a light/medium body.

With a two hour drive still ahead of me, I was not able to hang at the establishment too long. Yet even though I only stuck around for a short period of time, I met some truly hospitable people including a random guy who platonically bought me one of my drinks. This all just goes to further prove that not only does the South have the nicest people, but that if you want a great coffeehouse open late, you should head to Seeds in Birmingham.

You can always find this place packed on a weekend night and sometimes they host parties that you can't get into, but other than that happening every once in a while this is the place to be. The San Francisco venues have nice upstairs and down stairs area.
